1 Pot Mushroom Pasta

I used Farfalle pasta and Cremini mushrooms here but you can use any type and I know it’ll be great. Remember with 1 pot pastas that you may need to adjust liquid and cooking time - the key is to keep tasting the pasta for readiness as the liquid disappears and add more liquid slowly if needed!

6 oz cremini mushrooms - quartered

1 tsp butter*

4 cups of water

1/4 cup milk*

2 cups of pasta - dry

1 tbs garlic - minced’

1 bouillon cube or 1 tbs mushroom seasoning

1 tsp italian seasoning

Optional:

1 tbs fresh parsley - torn/chopped

2 tbs parmesan* - grated

*Veganize! (as pictured) Use soymilk, earth balance butter & vegan parmesan

  1. Add butter to a large saucepan and heat on medium heat.

  2. Add in mushrooms and stir. Cook for about 5 minutes.

  3. Add in seasonings and garlic and stir. Cook for another 3 minutes.

  4. Add in liquid (if using bouillon cube add now) and bring to soft boil.

  5. Add in pasta.

  6. Cook for about 15 minutes or until past is tender - you may need to add more liquid and cook longer is pasta is not yet cooked through.

  7. Once pasta is nearly cooked, stir in milk. If adding cheese, stir in now.

  8. Top with parsley.
