One Pot Asparagus Pasta

  • 1 bunch asparagus

  • 1 cup cherry tomatoes-halved

  • 2 tbs butter/earth balance

  • 1/4 cup grated parm or vegan parm

  • 1 1/2 cup vegetable broth

  • 1 1/2 cup water

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • Trim the ends off of the asparagus.

  • Add 1 tbs of butter to a large sauce pan. Heat to medium high and add in your asparagus.

  • Cook for about 5 minutes, stirring.

  • Add in water and vegetable broth and bring to a boil.

  • Add in pasta, and cook for about 8-10 minutes, until most of the liquid is gone.

    • If you notice that liquid is disappearing quickly, and pasta isn’t quite cooked yet, add a little more water or broth.

  • Add the rest of your butter, tomatoes and grated cheese. Stir.

  • Continue to cook for 2-3 more minutes and add your seasonings to taste.
