Broccoli Cheddar Soup

  • 2 cups broccoli- chopped

  • 1/2 cup yellow onion- diced

  • 1/4 cup shredded carrot

  • 1 cup cheddar cheese/vegan cheddar shredded

  • 1 tsp (or to taste) salt

  • 1 tsp (or to taste) black pepper

  • 1 cup veg broth

  • 1 1/2 cup soy milk

  • 1/4 cup flour

  • 1 tbs butter or earth balance

1. Add butter to a large pot & heat on medium heat on stove top
2. Add in onion, carrots & broccoli. Stir while on medium heat for 5-7 minutes.
3. Add in flour, salt & pepper and stir.
4. Add broth and milk. Bring to a boil and then lower heat.
5. Cook for about 20 minutes on low heat.
6. Add in cheese and stir until melts!
