Creamy Creminis

in sundried tomato sauce

  • 2 cups cremini mushrooms- stems removed

  • 1 tsp garlic, minced

  • ½ cup cashews

  • 1 cup water

  • ½ can sundried tomatoes

  • 2 tbs tomato paste

  • 1 tbs butter

  • Salt & pepper

  • Basil or parsley-chopped

Add butter and garlic to a pan and cook on low heat.

Add in mushrooms and cook for 6-8 minutes until mushrooms are soft.

Meanwhile, blend water and cashews on high speed for 1-2 minutes until very smooth.

Add tomato paste and sundried tomatoes to the mushrooms in your pan.

Stir in the cashew mixture and bring this to a simmer. Simmer for 3-5 minutes.

Stir. Add in salt and pepper to taste.
