1. Add eggplant and water to a large sauté pan and cook over medium high heat for 10 minutes.
2. Preheat oven to 425F.
3. Once eggplant is browned and cooked, add it to a food processor. Add in garlic, chickpeas, basil & spices.
4. Process on high for about 1 minute or until smooth.
5. Add in breadcrumbs and process for another minute.
6. Spray a baking dish with cooking spray.
7. Form circular balls with eggplant mixture and add to the baking dish.
8. Bake for 30 minutes.
9. Serve with red sauce, over pasta or zucchini noodles or by themselves!
