King Oyster “Scallops”

Ingredients:

  • 2 tbs Butter

  • 2 King Oyster mushrooms- tops removed

  • 2 cloves of garlic

  • 1 tbs parsley or basil (or any of your favorite herbs)- chopped

  • 1 tsp salt

  • 2 tbs olive oil

  • 1 lemon wedge

  • Wash & cut mushrooms into coin shaped pieces (about 1/4 of an inch thick)

    • Optional: slice x’s in mushrooms with knife

  • Heat oil in a large skillet on medium heat and add garlic cloves

  • Heat this for about 3-4 minutes.

  • When you start to smell the garlic, then remove the cloves.

  • Now, add in your butter. Once butter is sizzling, add your mushrooms in a single layer.

  • Cook mushrooms on one side for about 5-7 minutes and then flip to cook on the other side for 5 minutes. Let mushrooms cook without flipping or mixing too much.

    • Mushrooms will brown around the edges.

  • Once mushrooms are browned around the edges, and lighter brown in the center, they are done.

  • Serve mushrooms with lemon slice and herbs, and a sprinkle of salt to taste.

    *I used garlic sea salt I had on hand, which is a little thicker. Any sea salt will be great, but regular salt will work too.
