Tuscan Pasta
2 cups Fettechinne pasta
2 cups tomatoes- cherry, halved
2 cups spinach
1 cup basil
1/4 cup vegetable broth
1 tsp oil
1/4 cup milk (soy milk)
1 cup PARMESAN cheese (or follow your heart parm/shredded parm. even mozzarella will be fine)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1-2 tsp bruschetta seasoning
Cook pasta according to directions.
Heat soup pan on medium heat and add oil. Add tomatoes and seasonings and stir.
Add broth and milk and bring to a boil.
Once pasta is cooked, add in pasta and spinach and cook for another 5 minutes as spinach wilts.
Stir in cheese. Once cheese melts, add basil. Done.
