Tuscan Pasta

  • 2 cups Fettechinne pasta

  • 2 cups tomatoes- cherry, halved

  • 2 cups spinach

  • 1 cup basil

  • 1/4 cup vegetable broth

  • 1 tsp oil

  • 1/4 cup milk (soy milk)

  • 1 cup PARMESAN cheese (or follow your heart parm/shredded parm. even mozzarella will be fine)

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1-2 tsp bruschetta seasoning

  1. Cook pasta according to directions.

  2. Heat soup pan on medium heat and add oil. Add tomatoes and seasonings and stir.

  3. Add broth and milk and bring to a boil.

  4. Once pasta is cooked, add in pasta and spinach and cook for another 5 minutes as spinach wilts.

  5. Stir in cheese. Once cheese melts, add basil. Done.
