1. Add broth to a large pot and heat on medium high heat.
2. Once boiling at in sesame oil and soy sauce.
3. Add carrots, celery, mushrooms, and white parts of the scallion
4. Add in garlic cloves whole and seasonings
5. Turn heat to low and simmer for 25 minutes.
6. Add in tofu and spinach and simmer for another 5-10 minutes.
7. Garnish with green scallions and sesame seeds- done!
