Roasted Pepper & Tomato Soup
2 (or 1 jar) roasted red peppers- sliced
2 garlic cloves- minced
1 tbs veg. Oil
1 1/2 cups vegetable broth
2 tbs tomato paste
1/2 yellow onion- diced
2 (or a small can) tomatoes- diced
1/2 cup milk/soy milk
1 tsp Salt
1 tsp Sugar
1 tsp Thyme
1/2 tsp roasted red pepper flakes
1. Add oil and onion to a large pot and heat on medium heat for 5 mins
2. Add in garlic and cook for another 2 minutes, stirring.
3. Add in tomato paste, tomatoes, roasted red peppers & vegetable broth and stir.
4. Now add in spices & transfer contents to a blender. Blend until smooth (about a minute)
5. Return contents to the pot. Add milk & stir.
6. Adjust seasonings if you need to & let simmer for about 5 minutes.
If roasting your own peppers: slice peppers in half, coat with 1 tsp oil and roast on 400F for 30 minutes.
