Wild Mushroom Soup

  • 2 tbs butter (or earth balance)

  • 1 clove garlic - minced

  • 1/4 cup yellow onion- diced

  • 1 1/2 cup mushrooms-sliced (I used shiitake)

  • 1/2 cup milk (or soy milk)

  • 3 tbs flour

  • 2 cups vegetable broth

  • 1 tbs thyme

  • 1 tbs salt

  • 1 tbs pepper

1. Add butter to a large pot and heat on medium heat.
2. Add mushrooms, onion& garlic. Cook for 3 minutes stirring.
3. Add flour and spices. Stir.
4. Add in broth and milk. Bring to a simmer, stirring.
5. Simmer on low for 15 minutes.
6. (Add 1/4 water to thin out of soup is too thick)
