Easy Yellow Curry

  • 2-3 cups diced Yukon potatoes

  • 2 carrots- sliced

  • 1 can chickpeas

  • 2 carrots - cut in rounds

  • 1 1/2 cups coconut milk

  • 1 1/2 cups vegetable broth

  • 2 tbs oil

  • 2 tbs cumin

  • 2 tbs curry powder

  • 2 tbs turmeric

  • 1 tbs salt (or more to taste)

  • Parsley (optional)

1. Add oil to a large sauce pan and add in potatoes and carrots.
2. Cook for 2-3 minutes stirring frequently to make sure potatoes don’t stick.
3. Add in spices and stir.
4. Add vegetable broth and coconut milk.
5. Turn down heat and let simmer.
6. Simmer for 20 minutes.
7. Add in chickpeas and then simmer for another 10 minutes.
8. Top w/ parsley if you’d like
